Cooking Class “Flavors and colors of Bologna” 
4 day/3 nights

(every day from Monday to Saturday on request)

Day 1
Arrive and accommodation in the B & B or Hotel chosen
4.30 pm - 7.30 pm + dinner
Cooking lesson 1
Welcome with Italian coffee espresso
Learn the techniques to prepare hand made pasta and to make “Sfoglia” thin puff pastry as provided by the certified classic recipes of the traditional “Cucina Bolognese”:
- tagliatelle, garganelli,
- Ragù alla Bolognese (Bolognese meat sauce)
- Tigelle (flat breads)
- Torta degli addobbi (rice pie)
after the lesson
- appetizers with mortadella Bologna, parmigiano-reggiano cheese and and Aceto balsamico (balsamic vinegar)
- dinner with the pasta that you have prepared + traditional dishes of bologna and selected typical wines.
- Torta degli addobbi (rice pie)
- Nocino (sticky dark brown walnut liqueur)

Day 2
In the morning
9.30 am - 0.30 pm + lunch
Monuments and Market tour
meeting in a bar in the centre of Bologna for a Italian Coffee Espresso or Capuccino.
Walking tour to visit the basilicas, museum and monuments of hystoric center of Bologna
Then visit the outdoor food market with the most beautiful food shops of Bologna where you can see, taste and buy the famous culinary specialties: mortadella Bolognaparmigiano-reggiano cheese, prosciutto di Parma, Culatello di Zibello, Aceto Balsamico, zampone, salami and cheeses, season fruits and vegetables..
In the market we will buy the ingredients for the cooking lesson.

- Lunch in typical trattoria bolognese

In the afternoon

Cooking lesson 2
Learn the techniques to prepare hand made pasta and to make “Sfoglia” thin puff pastry as provided by the certified classic recipes of the traditional “Cucina Bolognese”:
- tortellini, tortelloni with ricotta cheese
- filling for tortellini
- filling with ricotta for tortelloni
- Piadina Romagnola (flat breads)
- Zuppa inglese (english trifle)
-after the lesson
- appetizers with Prosciutto di Parma, Culatello di Zibello
- dinner with the pasta that you have prepared + traditional dishes of bologna and selected typical wines.
- Zuppa inglese (english trifle)
- selection of Italian grappas

Day 3
In the morning
- Aceto Balsamico
Spilamberto to visit the Consortium of Traditional Balsamic Vinegar of Modena and the Balsamic Vinegar Museum and
- lunch in typical restaurant

In the afternoon
4.30 pm - 7.30 pm + dinner
Cooking lesson 3:
Learn the techniques to prepare hand made pasta and to make “Sfoglia” thin puff pastry as provided by the certified classic recipes of the traditional “Cucina Bolognese”:
- lasagne, passatelli
- Crescentine fritte (fried bread)
- Ravioli San Giuseppe or Panna cotta (cooked cream)
after the lesson
- appetizers with salami spring onions and mushrooms artichokes oil and pickles
- lunch with the pasta that you have prepared + traditional dishes of bologna and selected typical wines.
- Ice Cream and Balsamic Vinegar.

Free for shopping or visit extra
Departure

Book of traditional recipes

- The cooking class will be held in English
- We can change the start second your wish
- On request we can change the dishes of lessons with other typical recipes of Emilia Romagna and other regions of Italy (gnocchi di patatecotoletta alla Bolognese, spuma di mortadella, risotti, zuppe, spaghetti e maccheroni, pizza ….)
- special prices for non-cooking partecipants
