How are you and how is Gabriela ?
I been meaning to write to you since I came. . . some how  life took me inside with no time  to breath.
I want you to know that I had such a wonderful time with you , It was a great experience and I have enjoyed every minute, the cooking school and learning Italian dishes was great, but for me it was the whole experience: the hours in the beautiful market, the cooking, shopping for kitchen tools, beautiful beautiful Bologna , the wonderful hospitality of you, Gabriela and Anna.
It was great , really, every moment. I have told all my friends about it with so much passion. . . even now, two months after I came back home, I am still telling every one about it.   
I can tell you from the bottom of my heart that it was one of the best trips and experience I have made in my life.
I have made in my kitchen many things you have taught me, everything was great.
I plan to be in Verona on June-July on the Opera Festival. I am planning to go for a week, maybe I will come visit you then.
I still hope that maybe you will come visit Israel and be my guests .

Shaya and I are both well, thanks for asking. Yes we have tried to make the tagliatelle ragu - I have attached some pictures of our first attempt, not as good as you and Gabriella make!!  
We purchased some Balsamic Tradizionale before we left Italy but we havent opened it yet. The one we tried in your home was amazing.  
We will be sure to leave feedback on Tripadvisor.

From the photos we see that you have worked well: I am pleased
We come to the questions:
I should be dried tortellini 3 / 4 hours and then put in freezer. To cook them are taken from the freezer and throw it directly into the pot with the broth boils.
The tortelloni, however, it is better to cook them 2 / 3 minutes in boiling water, then season with a little olive oil and then freeze them in the freezer.
At the time of cooking remove from the freezer and throw them directly into the pot with boiling water.
Next week, I send you the recipes promises.
With separate email I send you the photos I took during class.
If you have problems downloading please let me know that other provision.

Dear Carlo,
It has been I while since I joined the cooking course with you, actually it was in September.
When I think back of those 3 days it is always with a warm heart.
I met lovely people (you & your team) and my fellow participants from the US were equally nice.
On top of that the cooking that I learned was excellent and very useful.
Almost every week I am preparing fresh pasta now and my son loves to help.
I have to admit that I am using the machine most of the times to roll out the pasta, sorry for that.
But we all appreciate the home made so much more than the pre-fab from the store.
The bolognese ragout is a favorite, but the sausage sauce is also much loved around the house.
And the lasagne... when I make it there never seems to be enough!
Only the tortellini, tortelloni, my family has not yet got used to those flavours.
So for the time being we stick to "regular" pasta.

Finally arrived home and wanted to thank you for the wonderful time I had with the both of you.  I truly enjoyed learning and making the food.  I have made the bologense already and turned out well.  I am getting the materials together to make the tortellini and tortelli with my granddaughters soon.  I look forward to coming back again and learning more and staying longer.

Lisa and I would like to thank you, Luciana, and Gabriella for one of our best days in Italy. We loved the entire experience - from the market to the meal.
Lisa and I particularly enjoyed your shopping style.
Like you, we have favorite shops for different food and they are never the tourist shops.
We take our time to find the best products for our meals.
